1 lb bacon
1 med
onion 4
carrots 2" strips
4 med potatoes cut
up 1/3 cup oil
1 1/2 tsp
salt
1 large roast pan
1 1/2 tsp
pepper
aluminum foil
Preheat oven to 350 degrees. Line
pan with foil, then use 1/4 of bacon to line pan. Set roast on top. Combine
vegetables, seasonings, and oil in bowl, mix and pour over meat. Cover with rest
of bacon. Cover with foil and bake for 6 to 7 hours.
Summer
Sausage
5 lbs ground
deer
2 Tbsp liquid smoke
1/4 c tender quick curing
salt 1 Tbsp pepper
1 Tbsp garlic
powder 1
Tbsp brown sugar
1/2 tsp
sage
2/3 c water
Mix ingredients well 10 minutes or
so. Roll out 3 or 4 rolls 3" in diameter. Wrap in plastic or foil and
refrigerate for 24 hours. Take wrap off and bake on broiler rack for 4 hours or
until done at 225 degrees.
Deep Fried Turkey
Strips
1 turkey breast cut into 1/2"
wide strips, cut against grain
3 large eggs,
beat
2 c
flour
1/2 tsp meat
tenderizer
1/2 tsp
salt
1/2 tsp
pepper
Mix flour and seasonings in a
medium sized bowl. Beat eggs in small bowl. Dip turkey strips in egg, then
roll in flour. Brown in oil in deep fryer until golden
brown.
